GRANNY SMITH APPLE, VINEGAR-FREE DRESSING
A light, creamy and elegant green apple dressing!
Makes 1-7/8 cups
juice of 1 large lemon
1 large Granny Smith apple, peeled, cored and diced
1/2 c. extra virgin olive oil
1/4 c. nondairy liquid creamer
1/4 t. salt plus to taste
Place all ingredients in blender container. Blend on low then high speed till very smooth and creamy. Adjust for salt and blend again. Chill before serving.
Notes: Serve over lettuce salad of your choice.
Salad suggestion:
crisped, torn leaf lettuce
cucumber, peeled, cut in half from tip to tip, then seeds scooped out, then shells cut crosswise into 1/4 inch wide strips
paper thin slices of peeled carrot
peeled, thin red onion rings
salad sprouts
Layer lettuce, cucumber, carrot and onion on individual salad plates. Drizzle with dressing, then top each with a small amount of salad sprouts.
